Finding the perfect ground-beef replacement for Taco Tuesday when you’re vegan and gluten-free can be tricky. Since some of the most popular meatless alternatives—like seitan or other wheat-heavy proteins—aren’t safe for those who have celiac disease or a gluten intolerance, it’s hard to find a substitute that’s as satisfying as the real thing. But now there’s a version you can whip up in 10 minutes using just nuts, spices, and veggies. Okay, and a food processor.

Dana Shultz, the plant-based food blogger behind Minimalist Baker, recently shared a raw vegan taco recipe that totally masters the meaty texture (and is packed with protein, to boot!), primarily with the help of the two main ingredients: raw walnuts and sun-dried tomatoes. The faux meat only takes 10 minutes to make, no cooking required. Simply use the food processor to both transform the walnuts into a semi-fine meal and create the spiced tomato-based mixture, which you then stir together. Next, pile it high on your gluten-free tortilla, add toppings, and chow down.
