Adhering to a few food handling rules can lessen the likelihood of food poisoning, according to Lisa Hauser, a health educator at the St. Clair County Health Department.
"Food-borne illness, also called food poisoning, peaks in the summer for two reasons," Hauser said in an email. "One, because bacteria grow faster in the warm summer months and need moisture to flourish, and summertime provides the heat and humidity that bacteria need.
