Baked chicken thigh, red bell peppers and quinoa. Because of the high concentration of protein, ease of use, versatility, and potential for increased yields, quinoa has been selected as an experimental crop in NASA's Controlled Ecological Life Support System for long-duration human space flights.
Naturally occurring ingredients contain various amounts of molecules called proteins, carbohydrates and fats. They also contain water and minerals. Cooking involves a manipulation of the chemical properties of these molecules.
Quinoa is rich in various nutrients; it provides protein, dietary fiber, B vitamins, and dietary minerals in amounts above those of wheat, corn, rice, and oats. It is gluten-free, and virtually free of sodium, Vitamin A, and Vitamin C.
